Colston Bassett is the smallest and most traditional dairy producing Stilton (regulations require it to be made in a specific region of England). The dairy has been buying milk from the same five neighboring farms since the 1920's, and to date has had only three head cheesemakers. Hand-ladled curds and animal rennet contribute to an exemplary Stilton: moist, minerally, fruity and complex. Not strong, but robust. Serve with Port, pears, and walnuts. Approximate weight 8oz.
