Slightly lower in fat than most Swiss cheeses, this one is similar to Emmentaler. Large eyes abound in the paste, created by gases, which naturally occur in the cheesemaking process. Very popular with good reason: its mildly sweet, nutty flavor is very accessible. Makes an excellent ham-and-Swiss sandwich, melt onto a burger, or serve as a table cheese with fresh fruit and whole-grain toast. Always aged for a minimum of 3 months, though some can be aged up to 9, 12 or even 15 months.
