Off the east coast of Spain, in the Mediterranean, lie the Balearic Islands, home to Mahon cheese. Made from cow's milk and cave-aged for 6 months, its rind is rubbed with olive oil and paprika, giving it a distinctive orange rind. Semi-firm with small eyes, it is tangy, slightly smoky (but not smoked), milky, savory, and fairly mild. Approximate weight 8oz.
